I've always been fond of "X owes me money, go collect" quests.

The angel agreed to trade a set of white wings for the head of another demon. Overjoyed, the demon killed one of his own and plucked the head right off its still-warm body.

The angel then led the demon to heaven, where he underwent centuries of the cruelest tortures imaginable. Finally, the pain was so great that he lost consciousness - at which point his dark wings turned the promised shade of white.
Defence/Survival

Depending on the game of course

Exploration quests that utilize clues.
Most notable example I can think of is Lifting the Vale.

When quests are just appropriated as tasks I agree. They're usually a "do this, get thing" sort of deal. I think the player feels compelled to do them out of arbitrary obligation to established questing tropes or established leveling/loot conventions. When quests give players more room to feel like they're making choices (even if it's ultimately illusory) the player feels like they have more agency, and accomplished something more personally rewarding.

"Ornate chandeliers suspended from a vaulted ceiling lit the spacious chamber; Jack tilted his gaze overhead and noticed how far away they were.  His thoughts wove around those bright lights, like a dance of ether masses spiraling in precious unison. Why must we try to clutch desperately for the mere threads of this world when we can clasp onto a tapestry of untold magnificence beyond this plane of existence?"
Stealth/assassination quests or a quest where you're awarded a useful ability.

Or punishment quests >.>

Jacob Potila was actually a Jacob Flotilla of lies.- WarTurkey
I like rescue quests where you really need to fight your way to the target and then get them out too.

Riley's Rangers from Fallout 3 being a great example

The quest to go down in Bitterblack Isle and kill Daemon is one of my favorites. So i guess quests that make you go trough hell.
